Directions
1. Prepare your ingredients.
2. In an ovenproof dish combine 1 tablespoon veg oil with teaspoon taco spice and the sweet potato.
3. Place in the oven at 180 degrees. Cook for 12 minutes until softened and brown.
4. Meanwhile in a frying pan heat 1 tablespoon of veg oil until hot, add the chicken, remaining taco spice and onions and fry for 7-8 minutes, stirring occasionally.
5. Add the chopped tomatoes to moisten, add the cooked sweet potato.
6. Warm the tacos through the oven for 30 seconds and serve.
