Directions

1. Rinse the lentils, cook them in five times their volume of water for 25 minutes. Drain and set aside.

2. Peel the carrot and onion, then finely slice them. Sauté them for about ten minutes in a skillet with olive oil. Add the tomato purée, cooked lentils, herbs de Provence, garlic, salt, and pepper, then mix.

3. Let simmer for about thirty minutes on low heat, stirring regularly. Meanwhile, cook the pasta according to the package instructions. Once the pasta is cooked, drain it and mix it with the bolognese. Serve immediately! Enjoy your meal :-)
