Directions

2. Stir-Fry Vegetables: Heat 1 tbsp of oil in a large skillet or wok over medium-high heat. Add the sliced onions, red pepper, green pepper, garlic, and ginger. Stir-fry for about 3-4 minutes until the vegetables are slightly tender but still crisp.
3. Cook the Beef: Tip the vegetables onto a plate and then in skillet or wok add the remaining 1 tbsp of oil. Add the beef slices in a single layer and then stir-fry for about 2-4 minutes until the beef is browned and cooked through.
4. Combine and Finish: Mix the vegetables back in with the beef. Add the soy, rice vinegar, and honey (if using). Stir-fry for another 1-2 minutes until everything is well-coated and heated through.
5. Serve: Transfer to a serving dish and garnish with fresh chopped coriander.
6. Serve with either noodles or rice.
